Taco with Avocado Salsa and Steamed Egg

Ingredients

· ½ diced avocado

· 3 cherry tomatoes

· 2 teaspoons jalapeno

· 1 tablespoon cilantro

· Salt and pepper to taste

· 1 egg

· 1 tablespoon water

· 1 corn tortilla

· 1 tablespoon cotija cheese

Method

Combine diced avocado, tomatoes, jalapeno, and cilantro together in a bowl. Season it with salt and freshly cracked pepper, to taste. Set aside. Heat a skillet and coat it with cooking spray. Crack the egg into the pan and season it with salt and pepper. Once the egg white is no longer transparent, add water to the pan and cover with a lid. Cook until the yolk is clouded over. Heat another skillet over medium heat. Cook the corn tortilla on both sides for one minute, or until warm and pliable. Spread the avocado salsa over the tortilla and then, place the steamed egg on top. Sprinkle with cotija cheese and cilantro.
