Chilled Black Bean, Feta & Cucumber Salad

Ingredients

· 3 cans black beans

· 1 can whole-kernel corn

· 1 medium cucumber

· 1 cup chopped cilantro

· 2 to 3 limes, juiced

· ½ cup chopped celery

· ½ green onions

· 1-2 cups crumbled feta

· Vinegar as per taste

· Salt & black pepper

Method

Combine the black beans, corn, cucumber, cilantro, celery, green onions and feta in a large bowl and toss until mixed evenly. Add lime juice and vinegar, stir, and taste. You may want to add more lime to taste. Add a dash of salt, pepper, and cumin, and adjust to taste. Add red chili flakes if desired. Chill for at least one hour before serving. You can freeze the salad for up to a week.
