Broccoli and Cheese Baked Potato Casserole

Ingredients

· 5 Yukon Gold potatoes

· 2 tablespoons olive oil

· Salt and pepper

· 2½ cups broccoli

· 1 red bell pepper

· 1 teaspoon dried thyme

· 2 tablespoons butter

· 2 cups cheddar cheese

· Fresh parsley

Method

Preheat oven to 250°C. In a casserole dish, add the chopped potatoes. Drizzle with olive oil, salt and black pepper and toss to coat well with a spoon or hands. Add in the broccoli and chopped bell pepper, and sprinkle with dried thyme. Top evenly with slices of butter. Now bake it for about 45-55 minutes, or until the potatoes are fork tender. Gently stir potatoes and then, top with shredded cheese. Return to oven and bake for an additional 10 minutes or until the cheese is melted. Top it with fresh parsley, and serve warm!
