Coconut Ice Cream

· 175 g flour
· 50 g desiccated coconut
· 1 teaspoon baking powder
· 2 tablespoons icing sugar
· 1 egg
· 300 ml coconut milk
· 400 g strawberries
· 1 lime
· Coconut oil
Mix the flour, desiccated coconut, baking powder, icing sugar and a pinch of salt in a bowl. Crack in the egg, and then whisk gradually incorporating the dry ingredients. Pour in the coconut milk, and whisk in too, until it forms a smooth batter. Put the strawberries in a bowl with the lime zest, and top over the lime juice followed by icing sugar. Toss together until the strawberries are slightly syrupy. Heat a teaspoon of coconut oil in a pan. Ladle in spoonfuls of the batter to cook pancakes for a few minutes each side. Stack the pancakes and spoon over strawberries, then dollop on some coconut yogurt to serve if desired.
